Hearty Kale & Quinoa Salad With Added Benefits

Winter is here! This time of year I crave fresh, nutritious foods after all the holidays are over. Purchasing high-quality produce can be challenging this time of year, but I came up with this hearty salad that is easy to produce all year long.
Instructions
- Chop and prepare fresh ingredients.
- Remove most of the spine from the kale and chop the leaves, adding them to bowl.
- Next chop apple into small uniform pieces and set aside.
- Prepare quinoa according to instructions. Let it sit for a few minutes to cool down slightly, then pour over the chopped kale leaves while it's still warm. This will help wilt the kale slightly. Let this cool.
- To make the dressing, add lemon curd, dijon mustard, apple cider vinegar, and WF Lemon Burst to blender or food processor. Mix together until combined, then slowly drizzle in the olive oil while mixing to emulsify. Add salt to taste.
- Once the kale and quinoa are completely cooled, add chopped apple, dried cranberries, and enough of the dressing to coat salad contents evenly.
- When ready to serve, top salad with crunchy toasted pine nuts and enjoy!
Tip: Make this your own! Try adding sunflower seeds in place of pine nuts, or your favorite crunchy salad topping. Feta cheese can also be a nice addition to this salad.
Salmon Bites with Sticky Orange Sauce

I remember when air fryers first became popular. Since then, there are recipes galore available for just about anything you can think of! I finally purchased my own air fryer a little over a year ago, and it has become a staple in my kitchen. I use it several times per week and it never fails me.
A friend recently told me about her new favorite dish-air fryer salmon bites. I of course googled it immediately, and saw a plethora of recipes to choose from. After reading over several, I decided to do my own take on this, and it turned out great!
Instructions
- Cut salmon fillets into cubes and preheat air fryer to 400 degrees.
- Toss salmon olive oil, or lightly spray it with olive oil cooking spray. Sprinkle with salt & pepper. Add to air fryer and cook for 5-7 minutes, shaking the basket halfway through.
- Add orange juice, rice vinegar, soy sauce, honey, garlic powder, and ginger into a bowl and whisk until combined. Drizzle in 2 tsp Wiley's Finest Cod Liver
- Oil while whisking and set aside.
- Remove salmon from air fryer when fully cooked. Drizzle orange sauce over salmon or use it as a dipping sauce. Enjoy!
Tip: Serve with rice, cauliflower rice, noodles, or in a lettuce wrap! Turn up the heat by adding chili flakes to the sauce, or a squirt of sriracha. Want even more flavor? Add more of your favorite spices to salmon before air frying.

Instructions
- Line a rimmed baking quarter sheet with wax or parchment paper.
- Add 2 cups of yogurt and 2 tsp of your favorite Wiley’s Finest liquid
Omega-3 supplement to a bowl and mix thoroughly.
- Pour the yogurt onto the parchment paper and spread evenly on the baking sheet so that it fills the shape.
- Sprinkle on toppings of your choice.
- Place in the freezer until the yogurt is firm, about 3 hours.
- Cut into 12-15 pieces, and enjoy cold.
- Store leftovers in the freezer.
